Crawfish, Crays, ('Yabbies', in Oz), they have just discovered them here. Yummo !

Better get me a trap and some 'Zaterains' spice mix, from New Orleans.
The Dutch have just discovered that they are good to eat, but they don't how to eat them.  Would love a 40 lb sack and a big boiler. (and a case of ice cold beer)

The problem is they are afraid the crays will destroy the dikes.
Crays are farmed commercially in fresh water ponds in Louisiana and east Texas.

Here is a shot from Ripper in Louisiana.  That's how they eat them there.  Cooked by the 40 lb sack in a big boiler, with hot spices, corn, potatoes, sausage and cold beer !
Eaten with your hands on table covered with newspaper.

Pull off the head and suck out all the spicy juices, the squeeze the meat out of the tail.
Poo on all that gourmet chef stuff.
One of my favorites !!!!
